India – Chef Piyush Menon’s Goan fare at Tamra, Shangri-La Eros New Delhi

The multi-cuisine buffet restaurant Tamra at Shangri-La Eros, New Delhi has made a mark for arranging pop-ups with home-chefs in collaboration with Chef Pin, bringing the spotlight on the wide variety of regional cuisines across India.  Last weekend, from 20-22 June 2024, Tamra collaborated with Chef Piyush Menon for a Goan Cuisine pop-up for its patrons.

The elaborate Menu listed all the popular Goan dishes, perfectly showcasing the expertise of Chef Piyush Menon and bringing a treat for the diners at Tamra. Chef Menon’s culinary journeys traverse across Kerala, Goa, Kolkata, from running authentic kitchens in every region, to owning a restaurant. He informs that Goan cuisine is a blend of Konkan coastal fare and Portuguese influences. A Electronics and Communication Engineer, Chef Menon has switched to pursuing full time his passion for the culinary arts.

The elaborate menu was balanced for vegetarians and non-vegetarians. Prawns, Fish, Chicken, Mutton, even Pork, in Starters and Mains, featured in starters like Rissois, Reachado Pao, Cafreal, Konkan Fry, Cutlets. Mains featured the Mangalorean Gassi, typical Goan Xacuti, Vinadloo, Ambotik, Guisado, Goan Curry, Solantulem. The Vegetarians also had Vodyacho Ross, Khatkhatem, Caldinho Curry, Tomato Saar, Suran Sorak Curry and versions with Mushroom, Jackfruit Cafreal. The sweet endings in the dessert segment had delicious Goan delicacies like Patoleo, Alle Belle, Bebinca with ice cream, Tender Coconut Pudding, Perad, Dodol with Ice Cream. To bring authenticity to the cuisine, Chef Menon brought some of the ingredients, like toddy vinegar straight from his special sources in Goa.

Taking note of the dietary preferences of Delhiites, Chef Menon said that he had to substitute Pork in dishes like Pork Vindaloo, with Mutton or Chicken as Delhiites were not comfortable with it. Executive Sous Chef Arun Thakur at Shangri-La Eros, New Delhi enlightened us on the process of ensuring the standards and offering at the pop-ups according to the requirements of the patrons. The Indian sub-continent has a huge range of cuisines, that differ across regions, and across communities. The food in Home kitchens too is different from that served in restaurants. Chef Pin pop-ups are a great way to bridge the gap.
